Flour. It ain't what it used to be.

When we think of a food staple, the use of flour has to be right up there with things like nuts, seeds and berries, vegetables, and the seasonal fruit we all enjoy. Staple foods are always available in one form or another, and easily preserved, dried or ground for use. But flour is becoming more and more processed. Not simply harvested and milled anymore, our flour today is overly processed, bleached, and sometimes has anti-caking agents added to it etc...which makes it more ‘non-food-like’ as it goes on and on.

Processed goods in general are on the rise, and with it we see a global epidemic of ill-health, diabetes, obesity, allergies, syndromes etc. So what is the argument for this ‘staple’ food? Why is it becoming such a health issue? Didn’t our ancestors all eat some form of processed grain?

Yes, most of them did….worldwide. Wheat however, the most widely used grain for flour on the planet at the moment, was never the kind of wheat we have today. It wasn’t laden with pesticide and herbicide residue. When processed at the mill it wasn’t bleached. It was stone-ground and wholly organic in production. The ‘raw’ kind of quality it had was quite healthy and quite useful for the populations who ate it. Even in the poverty stricken times of the Industrial Revolution in Europe, most people survived on ‘bread’ and water alone for long periods of time simply because the nutritional value of wheat back then was superior to the over processed glupe we get enmass now.

My own Dad is one person who will refuse to pay more than around $2.00 for a loaf of white bread...rarely eats wholemeal, and is now a Type 1 Diabetic...regularly having to take notice of his blood sugar levels and he’s living the stress that goes along with this whole process. When I broach the subject of buying some stone-ground, wholemeal, organic, bread (which is superior and delicious) he flatly refuses to think it would do anything better than his doughy white rolls or loaves. Its hard to change habits of a lifetime, and its hard to believe that what we have always been told is false,...but that’s the hard truth one has to start deciphering.

On that ‘food pyramid’ we were all exposed to 30years ago, the top part of the pyramid was sugars and fats. The bottom part, grains, had the handy marketing booster for cereals and breads, snack items and packaged goods...but what was not mentioned was that the loaf of bread there was not really what was meant by ‘grains’. Whole grains, like seeds, nuts and pulses are extraordinarily good for you. Processed grains are less and less valuable to your body because they literally lose some of their ‘energy’, their goodness, their ‘nutritional value’, the more they are processed. When you also see that the recommended intake is 6 or more servings per day, you can see this is easily possible in today’s fast food culture where someone can actually have 3 to 5 servings per sitting of processed white flour.

For example: Someone may start with toast, muffins or cereal for breakfast, a pastry or biscuit for morning tea, a salad roll or piece of pizza for lunch, cake or a baked energy bar for afternoon tea, and pasta or rice for dinner,...followed perhaps by a dessert of processed flour like a pudding. Frankly, if you're eating all this flour how on earth can you have room for anything else!!! I'd be blown up like a balloon, rolling around with a stomach the size of a basket ball if I ate this much bread and cereal each day!

If that is the total intake of flour for someone, even if they only do this a couple of times a week, its still a huge amount of toxins that are entering the body, exclusively from food, and putting the body under considerable strain to process, and eliminate. On top of this, a body is being exposed to environmental pollutants that we ALL live with as well. Why would anyone want to compound their toxin intake and compromise their health this way?

Flour bleaching uses some of the following additives:

(Just more ‘food additives’ brought into our massive food industry. They are used to make freshly milled flour (usually creamy in colour or even yellow sometimes...remember how ‘golden’ wheat really IS) appear white. These additives also increase gluten development in the flours)

· Organic Peroxides (mostly benzoyl peroxide) - also used for making plastics and explosives, teeth whitening pastes and hair dye as well as acne treatment gels.

· Calcium Peroxide (E930) used because it releases oxygen when added to water, and for fertilizer as a soil improver.

· Nitrogen Peroxide - is a ’waste product’ in the industrial synthesis of nitric acid (of which millions of tons are produced each year) giving off a toxic reddish brown gas which is an known and prominent air pollutant.

· Chlorine– yep we all know this one easily, just drink some tapwater and presto! Chlorine. It’s a powerful disinfectant and used for this purpose in swimming pools ...which we aren’t supposed to drink….doesn’t make a lot of sense does it...

· Chlorine dioxide—research now indicates it developes diabetes-causing contaminant alloxan when it reacts with the proteins in flours..Its also used to bleach wood pulp and used as well in the treatment of municipal drinking water...

· Azodicarbonamide is used in the USA under regulation, but is banned in Australia and Europe because it is a respiratory sensitiser and is a possible cause of asthma, and as it reacts with some food dyes, it may also heighten allergic reactions with other foods. Currently Subway Restaurants, Dunkin Donuts and Panera Breads all use this food additive...which is also used in the production of plastics. YUM. NOT.

Making bread at home is the best option if you love to have a loaf or two per week. If not, go and buy the organic, wholemeal loaf from the grocers, and you’ll be pleasantly surprised at how delicious it is, and how good it is for you too :)

If you’d like a failsafe bread recipe I have one! Easy, at home prep, with all the instructions. Once you try it you won’t go back to store bought bread and when you have bread at other people’s houses, you’ll be wistfully comparing it to that warm, crusty loaf you made last Saturday that just seemed like magic…

Leave a comment with your email details available to me and I'll send you The Simple Bread Recipe on pdf.

With beautiful baking aromas of warm crusty breads...

Taking the first step to Good Health...because you deserve it ;)

'One Step' by Jannette Tibbs
*taken using my little phone camera at the Ipswich Japanese Gardens

"One cannot do right in one department of life whilst he is occupied in doing wrong in any other department. Life is one indivisible whole." -Mohandas Karamchand Gandhi (1869-1948)

This quote so aptly describes the kind of thinking one must come to a harmonious relationship with, if one is going to access great health and happiness.

I was only thinking the other day about how so many people I meet who are saying they want to be healthy, lose weight, or become happier, tend to keep on doing the kinds of things in life that make them unwell, overweight and unhappy...doesn't make much sense, but because I also manifest this kind of behaviour at times, I do understand :)

When we start on a course, regime or 'diet' to promote a better life we often come up against the modern issue of 'treating' oneself.
"For what?" I have asked.
For living in a house? For having access to a car, running water, shelter, security? For having the luxury of buying your food daily from shops all over the place? I mean...honestly!? what are you 'treating' yourself for?

This is where I started when I began to explore just why some of the things I had hoped to begin in life just weren't 'taking on' in my life. Why couldn't I sustain buying only organic produce? It wasn't because its sometimes more expensive, but more that it was what I was wasting my money on that mattered. When I stopped buying lots of the things that weren't good for us, I had all that money to funnel towards things that were good for me.

Next time you say to yourself that its ok if you have that can of fizzy drink, or those pastries, or that bottle of beer, because its a 'treat' and you 'deserve' it...just take a moment and ask yourself
"Do I deserve to suffer ill health for the rest of my life?".
"Do I deserve to slowly poison myself and my children with toxic synthetic chemicals in my food?"
"Do I deserve to put on so much weight that my life becomes uncomfortable and I can't do the things I want to?"

The answer to those kinds of questions helped me choose the kinds of things I consume, and the kind of life I have now.

Its easy. Its your CHOICE. Eat and drink consciously, and live healthy, or go along with what the mainstream are doing and find yourself in hospital, or dependent on pharmaceuticals....
It really is an easy choice isn't it?

Blessings and Health

Living without Doctors...why do I do it?

When I tell people that I don't have a doctor they can't quite deal with it.
My children also, do not visit doctors. This is because they are rarely ill. They don't need checkups, or scans, or to be prodded and measured by someone who will then compare the rates of growth with a standardised chart...they are little individuals being well-cared for, and I notice they are vigorous and inquisitive, and grumpy sometimes, and quiet sometimes too...heaven knows, they ARE children...little humans with all the behavioural traits of the big ones... ;)

I just don't need any other validation that I am doing the right thing for me and my family, than to look at them, speak with them, and realise that we haven't been ill for ages! And that's with mixing among a huge range of people, ages, demographics etc. We visit groups full of unvaccinated children and adults, and we mix with groups of others who are vaccinated. It doesn't seem to matter other than the unvaccinated group is healthier with less children running about with runny noses....

So do I visit doctors at all?

I have been to a doctor in the last year...twice. Once was as a trial to see what they'd do to 'treat' a skin condition that had come back after I'd cured it with natural treatments...and the other was to have a 'Conscientious Objectors' form signed so that my children would not be forced under circumstances where I could not defend them, to be injected with potentially dangerous vaccines.

The first situation came about because I had let my diet fall into unhealthy, and unbeneficial habits, and so my body reacted in the way it does, by chucking out the toxins via my skin. I've been suffering with dermatitis on my face since I was 15, because of the antibiotics that were prevalently administered to me as a very young child. Antibiotics kill good and bad bacteria in the body, leaving you susceptible to viruses that eventually break down your immune system, which makes you even sicker, more often...(a nasty circle). Now that I've researched again into the best forms of self cleansing, healing and more into superfoods and nutrition, the skin condition is receding once again, with no use of medication at all. AT ALL. NO medication....just let me make that clear.

With the first situation, the doctor I visited didn't even hesitate to write me a prescription for antibiotics to 'clear it up'...however he had not asked me if I was allergic to them, if I was sick, if I was pregnant, or what my diet was. He just was happy to get me out of the doctors' offices and off to the Pharmacy with a prescription. Then, when I did mention that I was feeding my baby, AND that she was 14months+ old, he was gobsmacked that I was still breastfeeding her...stating "Really? I don't know of any other Mothers who are feeding their babies at this age!" (I'm still feeding her now at nearly 2 years of age, and wow, is she a healthy kid!)

So after that initial reaction from him he then went about investigating if I could take these antibiotics while I was feeding a baby. The information on the website (yes, the doctor had to look it up on the company website) and the packet stated that it was not suitable for breastfeeding/lactating mothers. So he rang the Pharmacy, and they said it was ok. Well, ain't that great .... !!!! So how do I feel about the reliability of the GP and friendly Pharmacist after this? not great, let me tell you.

Routinely, women in hospital birthing units are given antibiotics similar to what I had as a 'precaution' against infections. This then sets up a cycle of illhealth in a new Mum and new bub, that can only be rectified by taking in Probiotics and fermented foods, yet I know of NO ONE letting women know about this necessity after giving birth in a hospital and undergoing surgery or invasive procedures that require antibiotics to be prescribed.

I took the antibiotics as a trial, to see if
A, they did somehow clear up the skin condition
B, they gave me any side effects and what they would be

Harsh trial you may think, but I need to do this sort of thing for myself, and so I can tell others about it from first hand experience.

Firstly the antibiotics didn't clear up the skin issue. Secondly I developed vaginitis, thrush of the mouth, and felt generally wretched the whole time I was on the dosage. It took over two months for my body to rectify itself using large amounts of Probiotics in the form of Kefir and In-Liven, and it has taken until recently for me to go onto a significantly sugar reduced diet, to make the final leap into controlling the skin condition (ie: curing it from developing on my face) and regaining good health!

To get better:
  • I drank 1 cup of Kefir morning, lunchtime and evening, and before bed.
  • The morning dosage also had a spoonful of In-Liven ( a probiotic superfood powder from Miessence) mixed in.
  • Recently I've cut down on all processed sugars in my diet, and only consume small amounts of sour fruits (like blueberries) or a tiny amount of dried fruits. (like organic sultanas or goji berries)
  • I removed a lot of the yeast components of my diet including breads and spreads (like vege spread or vegemite)
  • I've also been revisiting the hydration therapy techniques I perfected in pregnancy and early breastfeeding, and it is amazing the toxins released from the body with this simple and cheap therapy!
  • I've increased the amount of fresh organic greens (and other vegetables) in my diet, and even grow my own powerful organic herbs which I use in my salads and as fresh teas or infusions daily.

My results are fantastic. The skin condition is receding and my skin is almost all healed. I've lost weight without even attempting anymore exercise. I feel so good. I have more energy, and I'm not spending money on sugary snacks! I've funnelled those funds into buying things like organic nuts, superfood powders and tablets, good skincare products (certified organic) and filtered or spring water.

No doctor has ever discussed the importance of nutrition and detoxification with me when I've come to them with this skin condition in the previous 22 YEARS.
Shocking hey? but there's your answer to 'why do I do it?'. Live without Doctors and you'll live healthier.
Live with commonsense approaches to good health that are based on commonsense Science, and not Science that is based upon pharmaceutical company profits...

Why is 'dominant thinking' dangerous?

I obviously live 'the alternative lifestyle', in some people's perspective of who I am. On the other hand, to those who are living an alternative lifestyle in my perspective, I am mundane, mainstream and predictable. All good,... we have to have varying perspective or we become an homogenised species.

I have been brought up in a society, and more importantly, within a family that bent to conform, to be obedient to society's wishes and demands, and all it taught me was sadness, pain, illhealth, suffering...

Dominant Thinking is the thought patterns, assumptions and expectations of society en mass. It seduces a person into believing they are being part of a team, part of the group, part of a bigger picture... the problem with this is that it leaves out the part where our individuality is seen as 'dangerous'.

We are organic beings. We are different, and every choice we make needs to be centered around how it will affect us in a cyclic event, taking into account that we live amongst incredible diversity of plants, animals, geography and climate.
Life is most irrevocably ORGANIC.

Grow, naturally, and Be happy :)

Are you aiming for a good Weight or good Nutrition?

My totally organic vege and herb tub growing abundantly :)

Recently I've been taking a superfood called Spirulina, and noticing some amazing changes in my body, my health, and because of this I've told a few people about how good I feel, and how I've lost weight without really 'trying' to. It has produced a few reactions from people, and from me too.

Firstly, everyone has been wanting to know 'how I'm doing it'. "How can I lose weight easily!?" Seems to be the most asked question out! But the answer is completely simple. Stop filling up your body (and your cells) with foods that clog you up, that sit around, and don't work for you.

The second thing that has happened is that a lot of people are wanting to tell me about the greatest new diet thing, regime, supplement, shake...whatever,...that they've tried, just bought, or signed up for. They need to see if I think that it stacks up against what I am doing, or if I think its 'valid'.

This produces a third reaction, and its my personal one, of being completely mystified how you could want to spend money on a 'program' to do what you are doing every day. Eating. YOU have to eat. YOU have to choose what you put in your mouth. So why on earth would YOU pay someone else to tell you what you already know? There's certainly enough free information out there to read about what is good food for you, so why are you tuning into some slick marketing and being talked into spending your $$? Beats me...?!

I want anyone who is thinking, considering, or questioning their diet regime to ask the most obvious and important question.
"Is the nutritional value of the food I am consuming, as high as it can possibly be?"
If your food contains additives, preservatives, trace chemicals left over from production, or an excessive amount of sugar, processed flours etc...then you are NOT consuming the highest quality nutrients, and in the end, your health will not be optimum. You'll crave more nutrients, and it will send you in the way of eating something to get more energy...

Spirulina is a superfood that has the added benefit of giving you the feeling that you are 'satisfied' nutritionally, and this helps your brain disconnect from the 'craving' sensation. Reducing sugar intake, and fat intake at the same time is healthy, and helps to get the most out of eating Spirulina. So what IS Spirulina? Its an algae (yeah, I know, not the easiest thing to market hey?) that is super high in all the nutrients, trace elements and minerals we need to survive.

As it is a food already, your body doesn't have to 'break it down' or liquify it, so it gets absorbed immediately by all your cells, and your body feels nourished straight away. If you take Spirulina as a tablet or a powder in some juice about an hour before eating, it helps to control overeaters from continuing on that kind of destructive ingestion. And it helps people with any dietary intake to feel that they only need enough to fill their stomach, and no more. It helps to stop overeating...simply put.

I find that having Spirulina before breakfast helps me completely knock out my usual morning tea cravings. In fact I don't have morning tea anymore. I just have a cup of tea.

I find that I can have some salad wraps for lunch and don't feel hungry until about 5pm or 6pm, when I have another light meal. If I get hungry at night, I snack on a handful of walnuts or similar. I haven't had time to access more than a few walks a week. I don't belong to a gym, and I haven't been able to buy a super expensive bicycle or the most up to the minute running shoes either....I've just added Spirulina to my diet and removed the excess sugar, flour and synthetics.

If you'd like to try some Spirulina, I'll be happy to supply some at a 10% discount on all orders over $100. It will be on my website soon, but for now you can view prices and sizes on the website at Synergy Natural.

Good nutrition is always going to give you Good Health. Preservatives and additives and non-organic produce is always going to bring unbeneficial 'residues' to your body, and in time, your Life.
You choose.
